Now that you’ve been adequately warned, on to the recipes!
The first recipe that I love, and have to promptly give away so that we don’t eat the dang things up in two days, is Chipotle and Rosemary Roasted Nuts by the Barefoot Contessa. I shared this recipe with my friends Mark and John and they can attest to the “make them and then give them away before you eat them all yourself method.” Even still, it’s amazing how easily one can decide to NOT give away some of the lovely bundles of nuts (heck that person didn’t even know that I intended to gift them to them. Right?). Recipe notes: I use only 1 tsp of chipotle powder and I skip the 2 tablespoons on rosemary at the end. I also bake them longer than what’s called for (about 10 minutes), but then I start with raw nuts so I don’t know if that’s the reason why it takes longer for the nuts to get nicely glazed.
The second recipe is the one featured in the picture. That gallon jar was 3/4 full when I finished the recipe at 5pm last night and this photo was taken at 9am this morning. Yep. Now you can see why I started this post with a disclaimer! Granted, my son took some to work but you can bet that was eaten up within an hour. Needless to say, I would recommend that you try this recipe for Popcorn Party Mix from the Smitten Kitchen but don’t think unkindly of me when it’s scarfed down almost immediately. Recipe notes: I think the peanuts were superfluous and I will leave them out next time and I used vegan Worcestershire sauce and Earth Balance butter.
