We’re lucky to be members of a winter CSA with Foxtail Farm. This time of year Foxtail starts moving away from giving us boxes filled with vegetables grown in the hoop house (baby it’s cold outside!!) to some of the delicious food items they prepare in their commercial kitchen (not to mention their massive root cellar and fresh frozen fruits and veg they put in our boxes). Still, we had spinach in our box last Saturday! It’s tender and delicious and probably the last we’ll have from them until spring. It was the perfect thing for this Spinach and Rice Casserole recipe.There are so many great things to do with spinach. I throw it in my smoothies. I use it in soups. I make spinach pesto. I make spinach and rice casserole!

This pilaf/casserole is great as a main dish for high carb vegans like us (in which case it serves 2) or as a side dish for just about anyone. Spinach and Rice Casserole

This is a quick, health and delicious vegan pilaf casserole featuring brown rice and spinach. You will enjoy this as a side dish or as a base for savory bowl entree.

Ingredients

  • 8oz spinach (chopped)
  • 2 cups brown rice (cooked)
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 1 tablespoon tamari
  • 4 tablespoons nutritional yeast
  • 1/4 teaspoon salt
  • fresh ground pepper to taste

Flax Mixture

  • 3 tablespoons ground flax seed
  • 6 tablespoons water

Directions

Flax Mixture
Step 1
Combine the ground flax and water together in a small bowl and set aside while preparing the rest of the ingredients.
Step 2
Preheat oven to 350 degrees.
Step 3
Combine remaining ingredients in a large bowl and combine until well incorporated. Pour in the flax mixture and stir well. Put the contents into a small casserole.
Step 4
Cover the casserole and bake for 45 minutes at 350 degrees.
